If you live in the Northern hemisphere, we’re already halfway into the planting season. It’s also not too late to plant vegetables to enjoy in the fall and winter, and I know that you’ll appreciate homegrown kale and carrots once the weather gets cold again. Eating healing meals is extra health insurance, and it’s easy to grow veggies at home.

Here are 2 plants I recommend planting in your garden for a fall and winter harvest (as long as you like their flavor):

Beets ~ These vegetables are beneficial to the liver, and help purify the blood. They are also helpful for relieving constipation. Beets will last in the ground all winter long, so plant soon for a continual crop. Please note that beet greens contain oxalic acid, which prevents us from easily absorbing calcium.

Carrots ~ Carrots help to relieve heartburn, constipation, and acne, and they even help to regulate hormones. If you’re wondering what to do with the greens on top, add them to soup broth.

A note: There are some concerns with the greens of carrots, because they contain alkaloids, which are potentially toxic compounds. Caffeine is an alkaloid that many people consume daily, and tomatoes contain a small amount of the alkaloid tomatine. Both of these are usually harmless in moderation, unless a person is quite sensitive. Use your best judgement when eating carrot greens, because we are all very unique and you may react differently. Some of my colleagues eat them without an issue, and other people are quite sensitive. If you decide to use the carrot tops, only consume them if you are using organic vegetables, and rotate your greens often.
